Turkish Smoky Coffee Tradition Thrives in Bursa

 

The unique ‘smoky’ coffee culture, originating in Erzurum, Türkiye, in the 1890s, continues to thrive in Bursa’s 600-year-old Fidan Han. This distinctive coffee, cooked in a cup rather than a pot, has become a favorite among both local and international tourists.

Smoky coffee, first crafted by Esat Efendi for caravan travelers in the 1890s, is made from a blend of 12 different plants. Unlike other coffees, its grounds never settle, earning its name from the soot formed around the cup when cooked over an open flame. Baycan Budak, Esat Efendi’s grandson, has kept this tradition alive in Fidan Han for the past 15 years, preserving a coffee culture that spans 135 years.

Budak explains, “Our coffee is brewed in the cup and contains 12 flower essences, which prevent the grounds from sinking. This unique quality, along with its rich flavor, has garnered international fame. Tourists from around the world visit Fidan Han to experience this special coffee, making it a brand synonymous with Bursa.”

To safeguard this heritage, Budak obtained brand registration to prevent imitations. He assures, “While some attempt to replicate our coffee, they cannot match the original. For the authentic smoky coffee experience, visitors should come to Fidan Han in Bursa.”
