Traditional ‘Ehlibilir’ Cookie Charms Visitors in Türkiye

 

In the historic city of Çankırı, Türkiye, the traditional “Ehlibilir cookie” has become a major culinary attraction for both domestic and international tourists. Officially granted a geographical indication certificate in 2022, this century-old, flour-based delicacy is celebrated for its exceptionally light and crispy texture. Once at risk of being forgotten, the beloved regional treat has experienced a cultural revival and is now a staple in local restaurants, especially during holidays and special occasions. According to local chef Hatice Altın, the easy-to-digest pastry appeals to people of all ages, drawing food lovers from across the country who want to experience this unique piece of Çankırı’s culinary heritage.
